I think I figured out why the ending of Child of the Moon bothered me so much:

In terms of plot and narrative, the reason to destroy Jefferson's hat was to place more episodes and thus more suspense in front of Emma and Snow returning to Storybrooke.

The storyline with Henry seemed to support that...Mr. Gold told him, after all, that he would have to learn to control his fear, and only then could he control his surroundings down there.

...And at the end of the episode, Henry's already controlling fire in the Netherworld.

so, either -
a) that's not really Henry. (and in Henry's dream, Aurora's looking like she controls fire now)
b) we're not going to see Henry - or at least no Henry - for the next few episodes.

What was the exact wording on the controlling fear - I thought it was the opposite: "once you control something, you no longer fear it" not "once you no longer fear it, you can control it." But I really can't remember the exact words.
