According to Edward Kitsis, they had wanted Jorge Garcia (whom they had worked with on Lost) to play the giant since Season One, but they never got the opportunity to get to the beanstalk story in the first season. They saved it for Season Two instead.

I love him! I saw OUAT first, but after seeing the episode of "How I Met Your Mother" where he played the guy who always misses out on stuff, all I can hear in my head when I see him is "Awwww maaaaannnnn!"
