Regina rewrote everyone's stories including Jefferson and she knew that he would remember everything (that was his curse). As for the White Rabbit card, i assume she was toying with him as she usually do. Jefferson's re-appearance is rather strange and I had hoped it would be cleared up but who knows? I don't think he is forced to stay in his house. I think that its his obsession with making a working hat that keeps him there.
I think Emma needs the convincing. Plus I am really curious as to what Regina will do once she finds out it was her apple that caused Henry's sleeping death and Regina does seem to love Henry (in her own way).
Emma is really resisting it all. She never had a family so to have her son that she put up for adoption tell her that her family is stuck in time and is Snow White and Prince Charming (which has to be every foster kid's dream) is a dream she's long given up on. She's the girl that ran away from everything, always moving on, never making any person connections so, like MM pointed out, she's reverting back to the Emma she used to be.
I don't know anything about Graham but I think it'd be the Huntsman as surely Graham is dead and buried by now. I think the fact that Henry falls into a coma due to an apple pie that he INSISTED was poisoned HAS to ring some alarms for Emma.
Ah, but remember, when Regina asked Mr Gold who Emma is, Mr. Gold replies, "you know exactly who she is." A girl who is 28 years old who turns up 28 years after the curse is created in a town that rarely sees strangers, Regina is a smart woman and figured it out.
